Ingredients

For The Einspanner Cream

  • ¼ cup (2 ounces or 57 grams) cold heavy cream
  • 1 ½ teaspoons granulated sugar
  • pinch kosher salt

For the Matcha Einspanner

  • ¾ cup (6 ounces or 170 grams) cold whole milk
  • 8 ounces (227 grams) ice cubes
  • 1 recipe matcha shot for lattes
  • 1 Tablespoon simple syrup
  • 1 recipe einspanner cream
  • matcha powder, for garnish

Equipment

  • handheld electric mixer with a whisk attachment OR a milk frother
  • electric kettle with temperature control
  • matcha bowl with a spout
  • matcha whisk

Instructions
 

  • First, make the einspanner cream. In a small bowl, combine the cream, sugar, and salt for the einspanner cream.
    Use a handheld electric whisk or milk frother to whisk on medium-high until soft peaks form, about 1 minute.
  • Assemble the iced matcha einspanner.  Pour the ice into a 12-ounce glass, then pour the milk over the ice. Spoon half of the einspanner cream onto the ice, making a small mound on one side of the cup.
    Whisk the matcha and syrup in a small bowl with a spout. Immediately pour the matcha over the cream.
    Spoon another the remaining half of einspanner cream into the drink. Garnish with matcha powder.
  • Serve immediately. Serve with a straw to stir the einspanner cream into the matcha.
