Whisk together 6 tablespoons (3 ounces) melted unsalted butter, 1 cup (7 ounces) granulated sugar, 1/2 teaspoon kosher salt,1/3 cup (4 ounces) honey, 1/3 cup (4 ounces) light corn syrup, 1 teaspoon freshly grated lemon zest, 1 tablespoon fresh lemon juice, 1/4 teaspoon ground cardamom, and 1/4 teaspoon ground cinnamon in a medium, microwave-safe bowl. Whisk in 3 large eggs one at a time, mixing well between each addition. Microwave the mixture at medium (50%) power, checking the temperature and stirring every minute or so until it gets to 130 (F). Alternately, you can also use a double boiler and heat the mixture until it reaches 130 (F).
